SUSHI SAMBA READIES FOR JUNE OPENING AS THE PALAZZO’S NEWEST HOTSPOT
When Sushi Samba opens at The Palazzo next month it will be the 7th and largest restaurant in the group that stretches from New York to Chicago, Dallas, Miami to TelAviv. As the first outpost on the West Coast it will also mark the debut of the SugarCane ultra lounge. Luxe Life will get the hard-hat tour in advance of the opening but for now we’ve got first details of the 14,000 square-feet, 150-seat restaurant.
In addition, there’s a 21-person sushi bar and a main bar for 35 others. It will be open daily for lunch through 4 a.m.! With a South American robata grill, many dishes will be completely new to Vegas diners including classic Japanese tempura paired with Brazilian churrasco and feijoada and Peruvian anticuchos, which is marinated skewered meats roasted over an open fire.
Dramatic 16-feet ceilings will create a soaring atrium with a Carnival inspired environment with 3D art installations. Art projections will move constantly on the walls, which will feature the colors, flavors and cultures of Japan, Brazil and Peru.
The sultry atmospheric late-night SugarCane lounge will be found at the end of a long dark corridor complete with stage, dance floor and DJ booth with a custom made simulated sugarcane ceiling of moving lights encased in tubes and rods, The lounge will hold 174 seats and another 20-person VIP section.
Chef Jose Mendin, who was chef at the Miami Sushi Samba will be executive chef here in Vegas guaranteeing East-West fare uniting Brazilian flavors, Japanese techniques and Peruvian culinary traditions all on one plate.
